Advantages of Spiral Mixer over Dough Mixer:
1. Typically, the rotation of a spiral mixer is faster and more efficient than a dough mixer, reducing friction on the dough. The dough temperature remains stable and does not heat up quickly. This is important because high temperatures can damage the quality of the yeast and slow down fermentation. Therefore, the dough results using a spiral mixer will be better than a dough mixer.
2. The spiral mixer has better control over the mixing process. The mixing becomes more consistent and reduces the risk of overmixing or undermixing.
Disadvantages of Spiral Mixer compared to Dough Mixer:
1. Spiral mixers are generally more expensive than dough mixers.
2. The dimensions of a spiral mixer are generally larger than a dough mixer, thus taking up more space. For example, the dough mixer HO-25 can handle more than 20 kg of dough, while using a spiral mixer would require a 50-liter capacity.
3. The power consumption of spiral mixers is generally higher than dough mixers. For example, the dough mixer HO-15D for 15 kg of wet dough has a power of 1500 watts, while a spiral mixer with 1500 watts (20-liter type) can only handle 8 kg of dough.
